Houghton Thomas Yule Shiraz honours Thomas Newte Yule, one of three British army officers who purchased the original Houghton property in the Swan Valley in 1836.
The fruit is sourced from the Justin Vineyard in Frankland River, planted in 1970. The grapes are harvested and sorted by hand.
The fruit is crushed in small, traditional open top fermenters, with a portion left as whole bunches. The juice undergoes fermentation with indigenous yeast, yielding texture and complexity to the wine.
At dryness, the wine is pressed to tank and transferred to Burgundy coopered French oak. After malolactic fermentation and 14 months of maturation, the wine is blended before filtration and bottling.
Dark ruby, Houghton Thomas Yule Shiraz is perfumed and elegant with vibrant fruit flavours, firm yet fine tannins and gentle acidity. Cellaring potential is 12 years.
